Arugula, Watermelon and Marinated Cucumber Salad

1 pkg baby arugula
1 cup seedless watermelon, cut into 1 inch cubes
4 oz crumbled feta cheese
1 whole english cucumber, thinly sliced
1-2 cups First Taste Champagne balsamic vinegar

For the Vinaigrette:
1/4 cup First Taste Black Currant balsamic vinegar
1/2 cup First Taste Basil infused olive oil
1 tsp Kosher salt
1/2 tsp black pepper

Place the thinly sliced cucumber in a bowl and cover with the Champagne balsamic vinegar and let marinate in the fridge for 30 minutes. Before use strain over a colander.

In a bowl pour in the 1/4 cup black Currant balsamic vinegar and slowly whisk in the Basil infused olive oil till emulsified. Add salt and pepper and whisk together.

In a large bowl place the arugula, watermelon, marinated cucumber, and feta and drizzle with enough vinaigrette to coat the greens lightly. Serve immediately!
