Cauliflower Mash

Cauliflower Mash
Ingredients :
2 heads of cauliflower
1 tub Knorr homestyle chicken stock
water to cover
4 Tbsp First Taste Tuscan Herb Infused Olive Oil
salt and pepper to taste
Directions:
Cut cauliflower florets off of stem and place in large pot with tub of Knorr homestyle chicken stock and cover with water.
Bring to boil and reduce heat to simmer. Simmer until florets are fork tender then drain in colander.
Then place cauliflower into a food processor and pulse slowly adding the Tuscan Herb infused olive oil. Season with salt and pepper to taste and serve immediately.
