Poached Pears with Vanilla Balsamic Reduction
Ingredients :
3 pears, peeled, halved and cored
1 bottle (750ml) sweet dessert wine
1 vanilla bean, split and seeded
1 cinnamon stick
1 star anise
1/2 inch piece of ginger, peeled and finely chopped
1 cup sugar
1 cup water
1 cup Vanilla Balsamic Vinegar
Vanilla ice cream as needed
Directions:
In a large pot combine the wine, vanilla bean, cinnamon stick, star anise, ginger, sugar, and water. Bring to a boil then add pears and reduce heat to a simmer until pears are cooked through, about 25-30 minutes.
Remove from heat and let pears cool in cooking liquid.
In a small pot bring Vanilla balsamic vinegar to a simmer and reduce by 1/2 and remove from heat, let cool for serving.
To serve:
Place pears core side up and place a scoop of vanilla ice cream in center, then drizzle with vanilla balsamic reduction
