Grilled Peaches with Homemade Honey Ginger Frozen Yogurt
Ingredients :
Frozen Yogurt:
8 cups plain yogurt
1/2 cup light corn syrup
3/4 cup granulated sugar
2 Tbsp Honey Ginger Balsamic Vinegar
2 tsp honey
1 Tbsp minced fresh ginger
1/4 cup sliced crystallized ginger

Grilled Peaches:
Coratina EVOO (or other high Polyphenol EVOO)
3 firm but ripe peaches, pitted, quarterd (or halved)
2 Tbsp sugar
2 Tbsp brandy
1 Tbsp Serrano Honey Vinegar

Frozen Yogurt:
Place yogurt in a cheesecloth-lined colander set over a bowl. Cover and refrigerate for 12 hours. At end of 12 hours, discard the liquid and cheesecloth.

In a bowl, combine the drained yogurt, corn syrup, sugar, honey ginger vinegar, honey, and fresh ginger. Transfer mixture to ice cream maker and process per manufacturer's instructions, about 25 minutes. Transfer frozen yogurt to an airtight container, fold in crystallized ginger and freeze for 2 hours.

Grilled Peaches:
Place a grill pan over medium-high heat or prepare the barbecue (medium-high heat). Lightly brush the grill pan or rack with Coratina EVOO. Place the peaches on the grill pan and do not move the peaches, otherwise you will not have those great grill marks. It takes about 2-3 minutes per side to get those grill marks. Grill the peaches until the grill marks are formed, slightly softened and heated through, about 5-6 minutes total.

Meanwhile, stir the sugar, brandy, and Serrano Honey Vinegar in a medium bowl to blend. Set the brandy mixture aside.

As the peaches are ready, remove them from the grill and place them in a shallow baking dish. Top them with the brandy mixture, and toss to coat. Set aside for 15 minutes and allow to marinate, tossing occasionally.

To Serve:
Place peach quarter or halve on dish and scoop frozen yogurt into pit center, can drizzle extra brandy sauce overtop. Serve.
